On the strava thing, I don't purposely go looking for segments, I'm just on form at the moment, especially the MTB and the top tens and KOM's are coming about from just riding my bike.
There is just one segment that I go for and that's a long downhill, but then I just like ragging the shit out of the bike down there anyway.

Cramps are a combination of things, this year in the long races I have been suffering at the end of the race with them, damn painful and unpleasant. Probably a case of exercise induced cramps and the muscles are working harder than ever. Yes hydration and food plays a huge part and any long ride these days I always take some gels and food with me.
